Blood Orange and Thyme: Delicious Recipes!

It's been sweltering here in the UK for the past 8 weeks or so, so here are a couple of refreshing recipes we love to help keep you cool and hydrated on a hot day!

Blood Orange & Thyme Mocktail

2 blood oranges

2 sprigs thyme (leaves removed, roughly chopped)

Soda water

How To Make

  1. Juice and strain the oranges through muslin / a strainer
  2. In a shaker, add the juice and thyme and shake vigorously for about 15-20 seconds
  3. Strain the mixture into an ice filled glass
  4. Add some soda water and a slice of lime

(Try rimming the glass with fresh lime zest and salt after dipping them in agave nectar!  If you prefer an alcoholic beverage, you can swap out the soda water for gin / vodka)

Easy Blood Orange & Thyme Sorbet

10 blood oranges, freshly squeezed
1 tbsp fresh thyme leaves, very finely chopped
150 ml organic maple syrup

How To Make

  1. In a large pan, add the juice, thyme and syrup and stir or whisk to combine
  2. Chill in the fridge for about an hour
  3. Pour the chilled mixture into an ice cream maker and churn
  4. Once it is beginning to set, tip the mixture into a freezer proof container and freeze for at least 4 hours
  5. Remove from the freezer and leave to stand at room temperature for couple of minutes before serving

If you don't have any thyme, you can substitute for rosemary in any of the recipes, and you can also swap the blood orange for pink grapefruit.
